Why we ditched the drum — the physics of fluid-bed roasting

But in a modern specialty market, consistency is the only currency that matters. We didn't switch to fluid-bed technology because it was trendy; we switched because we reached the physical limits of what a rotating metal drum could achieve.

A common misconception in the industry is that conduction—the bean physically touching hot metal—is necessary to build "body." From an engineering standpoint, conduction is actually the leading cause of "Tipping" and "Scorching"—those bitter, burnt edges that ruin a high-scoring microlot.
